The City of Tracy has approximately 372 licensed Food Service Establishments, which consists of 29 schools, about 230 restaurants, 4 major food production industries, and over 100 retail markets which sell ready-packaged food.

EPA’s Report to Congress on combined sewer overflows (CSOs) and sanitary sewer overflows (SSOs) identified that “grease from restaurants, homes, and industrial sources are the most common cause (47%) of reported blockages. Grease is problematic because it solidifies, reduces conveyance capacity, and blocks flow.”

Tracy Municipal Code section 5.24.180 states that grease, oil, and sand interceptors shall be provided by the waste discharger in restaurants, buildings with cafeterias, service stations, and when, in the reasonable opinion of the City, they are necessary for the proper handling of any flammable wastes, sand, grease, oil or other harmful ingredients.

When installed, all grease, oil, and sand interceptors shall be maintained by, and at the discharger's expense, in a continuously efficient operation. The discharger shall keep a record of the cleaning and maintenance of the grease interceptor, with receipts, from the company doing the maintenance. These records shall be made available to the City upon demand.
